Compromise is not a word that fits into the Peugeot vocabulary. For each spice, there is one – and only one – Peugeot grinding mechanism: peppercorns; coarse dry salt; chilies; herbs and spices; wet salts; and nutmeg. Add the coffee mechanism, which started it all and there are seven unique Peugeot mechanisms. Each is designed to derive the most flavor and greatest aroma from its complementary spice. Aesthetically pleasing, Peugeot mills deliver the height of quality, durability, reliability and innovation; making these mills the ones to which all others are compared. The high quality beech wood used in Peugeot mills is grown, harvested, dried, shaped and finished in France. For Paris u'Select mills, the grind is adjusted by turning the ring at the bottom of the mill. Turning the ring in one direction makes a finer grind; turning in the other makes it coarser. Once the grind size is set, it will stay in place until the user changes it. This mill is equipped with Peugeot's legendary pepper grinding mechanism. Made of case-hardened steel, it has received additional treatment against wear and corrosion. Its double-row of helix-shaped claws grab and crack each peppercorn, before drawing it down to the teeth for the perfect grind.

I finally splurged after becoming sick and tired of mills that deteriorate in 30 days. I went through several sets of mills where the plastic grinding mechanisms were doing nothing more than crushing the pepper into mush after just a few weeks of usage. These are solid, high-grade mills. I knew these would be different right from the start because I could hear the peppercorns CRACK with a nice popping sound as I turned the mechanism. The variable settings are a nice to have as well. Easy to refill, durable -- expensive but worth the money if you want your pepper cracked properly.
